Kirsten Tibballs' Apple Crumble with Pure Cream

  1. For the crumble, place the butter, sugar, flour, cinnamon and salt in the bowl of a stand mixer fitted with a paddle attachment. Mix until it forms a crumble consistency, being careful not to create a dough. Lastly mix the oats through by hand.
  2. For the filling, pre heat oven to 170°C. Peel and slice the apples. In a frying pan melt the butter, sugar and honey together until the butter has completely melted. Add the cinnamon, salt, vanilla and apples and sauté the apples until just tender, be careful not to overcook the apples as they will be baked again.
  3. Place the apples in a baking dish measuring approximately 22cm x 22cm. Combine the egg yolks and Bulla Pure Cream and pour the mixture over the apples.
  4. Cover the apples with the prepared crumble topping. Bake for approx. 20-25 minutes or until golden brown.
  5. Serve a generous scoop of apple crumble and drizzle with Bulla Pure Cream.
