Cottage Cheese Bread with Walnuts

Ingredients

  • 1 1/2 cups plain flour
  • 40g walnuts, chopped
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 250g Bulla Cottage Cheese, Original
  • 3 extra large eggs
  • 60mL light olive oil
  • 1/3 cup caster sugar
  • honey, for drizzling
to serve
  • additional Bulla Cottage Cheese, Original
  • bananas
  • honey
Tips
  • Add pepitas to the top of loaf after brushing on the honey or try adding some mashed banana or blueberries to the batter.

Cooking Directions

  • Preheat oven to 180°C (160°C fan-forced). Line a 7cm deep, 10cm x 20cm loaf tin with baking paper.
  • Combine flour, walnuts, baking powder and cinnamon in a large mixing bowl.
  • Whisk together the Bulla Cottage Cheese, Original, eggs, oil and sugar until well combined. Pour into the dry ingredients and, using a large spoon, mix until just combined. Spoon into prepared loaf tin and cook for 50-55 minutes until an inserted skewer comes out clean.
  • Remove loaf from tin, drizzle with a little honey, brushing with a pastry brush to cover the crust and allow to cool on a wire rack.
  • Serve slices of bread with additional Bulla Cottage Cheese, Original, drizzles of honey and some sliced bananas. Alternatively serve a slice as a sweet snack to have with coffee.
